Quincy was settled when the Chicago Road opened in 1833. Following the completion of the Lake Shore and Michigan Southern Railroad in 1852, the town grew as a shipping point and a service center for the surrounding country. The Star of the West Milling Company (c. 1915 with additions) stands at 14 Church Street.
